Vegetable Waffles with Spinach
Fluffy and nutrient-rich savory waffles made from spelt flour and spinach. Perfect as a snack, lunch, or for children's birthday parties.

Ingredients
- 200 g Spinach
- 100 g Spelt flour
- 0.5 tsp Salt
- 4 g Baking powder
- 10 g Herb mix
- 1 piece Egg
- 75 g Quark
- 50 ml Sparkling water
- 1 tbsp Lemon juice
- 0.5 tsp Lemon zest
- Oil
- 100 g Cream cheese
- 100 g Smoked salmon
- 1 piece Avocado
Instructions
- 1. Allow the spinach to thaw (if necessary, in a warm water bath). After thawing, squeeze it out very well until approximately 100g of weight remains.
- 2. Sift the flour, baking powder, and salt into a bowl, mix, and set aside.
- 3. Place the spinach, herbs, egg, quark, sparkling water, and optionally the lemon juice and zest into a high-performance blender. Puree until no spinach pieces are visible.
- 4. Add the pureed liquid to the flour mixture and stir with a wooden spoon until a smooth batter forms.
- 5. Heat the waffle iron and grease it with a little oil.
- 6. Pour the batter into the waffle iron in portions and bake for about 4 minutes until golden brown.
- 7. Optionally, spread the finished waffles with cream cheese and top with salmon and avocado to serve as a sandwich.
