Classic Banana Bread
A moist, tender loaf that turns over-ripe bananas into the easiest one-bowl bake you'll make all week.

Ingredients
- 3 piece very ripe bananas, mashed
- 100 g butter, melted
- 150 g light brown sugar
- 2 piece eggs
- 1 tsp vanilla extract
- 220 g all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 80 g walnuts, chopped (optional)
Instructions
- 1. Heat the oven to 175 °C and line a 900 g loaf tin with baking paper.
- 2. In a large bowl, mix the mashed bananas with the melted butter.
- 3. Whisk in the brown sugar, eggs and vanilla until smooth.
- 4. Add the flour, baking soda, salt and cinnamon. Fold gently until just combined — do not overmix.
- 5. Fold in the walnuts if using, then scrape the batter into the tin.
- 6. Bake 55–60 minutes, until a skewer inserted in the centre comes out clean.
- 7. Cool in the tin for 10 minutes, then turn out onto a rack to cool completely.
