Fudgy Chocolate Brownies
Dense, glossy-topped brownies with a fudgy centre and crackly crust — the only brownie recipe you need.

Ingredients
- 200 g dark chocolate, chopped
- 175 g unsalted butter
- 250 g granulated sugar
- 3 piece eggs
- 1 tsp vanilla extract
- 110 g all-purpose flour
- 40 g cocoa powder
- 0.5 tsp salt
- 100 g dark chocolate chips
Instructions
- 1. Heat the oven to 175 °C. Line a 20 cm square tin with baking paper.
- 2. Melt the chopped chocolate with the butter over a pan of simmering water (or in short bursts in the microwave). Let it cool slightly.
- 3. Whisk the sugar, eggs and vanilla together for 2 minutes until pale and thick — this gives the crackly top.
- 4. Stir in the melted chocolate mixture.
- 5. Sift in the flour, cocoa and salt, and fold until just combined. Fold in the chocolate chips.
- 6. Pour into the tin and bake 25–30 minutes — the centre should still have a slight wobble.
- 7. Cool completely in the tin before cutting into 16 squares.
